Slow Food Presidium

Made from nosiola, from the loose, well-ripened bunches of the old vineyards of the Valle dei Laghi. The grapes dry on racks for five or six months, until Holy Week, which is where the name comes from. The must then ferments in small oak for six to eight years, and once bottled the wine starts again and can run past fifty.
