History

The Cistercian nuns of the Monastero Trappiste di Vitorchiano make one of Lazio's most celebrated natural wines, from five hectares of organic vines they have farmed since the early 1990s in the Tuscia hills north of Viterbo.

Their wines reached a wider audience once Giampiero Bea began advising them in the early 2000s, and are made from Trebbiano, Verdicchio, Malvasia and Grechetto co-fermented with wild yeasts, unfined and unfiltered.

The white 'Coenobium' and, from 2008, the skin-macerated 'Coenobium Rusticum' are the two labels, produced to support the monastic community.
